To get the most out of the foods we eat especially plant foods, it is to our advantage to eat them raw whenever we can. It is natural for our digestive system to eat a high alkaline diet and our physiology in general to consume plant food in its raw state to get the full benefits of the phytochemicals found in plant based foods. These “bio-chemicals” give our bodies the boost that it needs to keep our immune system running at full capacity and it is easier to digest. This is probably the way that nature intended for us to eat our food but we discovered thousands of years ago that cooking our food made it easier to chew and in some cases it made the food taste better.
Try consuming roughly 50-70% of your food in the form of veggies and fruits for about 2 weeks and see if you notice any change in your health. This is probably not be long enough to see major changes but it is a start. I tend to notice that I feel light on my feet and very energetic when I eat a diet high in raw veggies and fruits. Plant-based food should make up no more than 70% of your diet as this gives you room to indulge occasionally on treats such as ice cream or chocolate. I still believe in enjoying good food in moderation.
Just about every major health organization has suggested eating five to nine servings of fruits and vegetables per day to maintain health. Yet, according to the U.S. Department of Agriculture, less than nine percent of American adults consume the recommended number of servings. If we would focus on consuming more “green food” then we could start to see a reduction of cases of the major killer diseases in North America, primarily Heart disease and Diabetes. Green foods is a term usually used to describe young cereal grasses such as wheat, barley, oats and alfalfa, as well as spirulina, chlorella, kelp and other sea vegetables.
While dark green plant foods are loaded with nutrients, one of these foods biggest claims to fame is lutein. Lutein is an antioxidant found in high levels in a type of eye tissue called the macula. The macula helps tell the brain what the eye is seeing; Degeneration of the macula happens with age and is the leading cause of blindness in elderly men and women. Regular consumption of lutein-rich foods helps prevent macula degeneration, thus lowering your risk of blindness.
